Moving right ahead in our summer series of recipes that only use Neocate products, today’s recipe offers some fun variety, in both flavor AND texture! Plus it mimics a piece of coastal summer nostalgia for family members with allergies.
This recipe combines the great tastes of Neocate Junior Chocolate and Neocate’s E028 Splash Grape to mimic a familiar favorite: chocolate-covered raisins! We take the flavor combination one step further by mixing the two with Neocate Nutra to make an edible treat that doesn’t require a straw, a cup, or a spoon. It’s perfect for summer, since the texture is similar to saltwater taffy!
As always, make sure your little one’s healthcare team is on board with this recipe if she/he has an especially sensitive tummy or any difficulty with textures. The team may suggest offering water along with the treats. Also, we typically don’t recommend freezing Neocate products, especially for those on a strict elemental diet who need the full nutrient profile, because some vitamins don’t survive freezing well. However, your little one’s healthcare team may be comfortable with this as an occasional frozen treat.
Neocate Chocolate-Raisin Taffy Treats
- 3 scoops Neocate Junior Chocolate
- 10 scoops Neocate Nutra
- 1 Tablespoon Neocate’s E028 Splash Grape (or water, if preferred)
Add Neocate Junior Chocolate and Neocate Nutra powders to a small, shallow, sturdy bowl. Add Neocate’s E028 Splash Grape and mix well with a small, sturdy fork; this will take several minutes. Do not be tempted to add more liquid; the mixture will eventually form a very thick dough. Cover and refrigerate mixture until well-chilled, at least one hour. Working with clean hands, quickly roll small shapes of the mixture to resemble marbles and transfer to a sheet of wax paper spaced at least two inches apart; treats will flatten and spread on their own. If treats touch they may stick together. We suggest freezing the treats for the most taffy-like texture, but this is optional. Cover and keep cold until ready to serve and enjoy out of the fridge as the treats soften quickly.
Consume refrigerated treats within 24 hours, or frozen treats within 7 days.
