It’s time to share a perfect spring/summer recipe that only uses Neocate Nutra and our new Neocate Junior with Prebiotics, Strawberry. This is another great recipe for folks who have to follow a strict elemental diet, avoiding even foods that are less common allergens such as fruits and vegetables.
As always, don’t forget about the other great resources we have for elimination diets that you can use when adding foods gradually back in to your die. For example, the Neocate Food Allergy Cookbook brings together ideas from many parents and families who manage allergies like experts. They’ve come up with great dishes that have helped many other families in their allergy journey! Other recipes can be found here.
Today’s recipe mirrors past recipes we shared, vanilla pudding, chocolate pudding and tropical pudding. All of these delicious recipes combine the flexible texture of Neocate Nutra with the great taste of flavored products in the Neocate family.
Neocate Strawberry Pudding
· 8 scoops Neocate Nutra
· 3 scoops Neocate Junior with Prebiotics, Strawberry
· 2-3 tablespoons cold water
Add all ingredients to a bowl and blend well with a spoon or whisk. We suggest starting with 2 tablespoons water and adding more as needed to reach the desired consistency. The pudding can be consumed immediately or refrigerated. After about 1 hour in the refrigerator the consistency will be thicker. If refrigerated, consume within 24 hours, as with all Neocate products. Makes one suggested serving.

Make it your own:
Because we don’t use artificial colors in Neocate products, the pudding will look like vanilla pudding. For added color and flavor, why not try adding sliced, diced or pureed fresh fruit that’s tolerated to this recipe? Or you might substitute a tolerated fruit juice for the water called for in the recipe.
